Especially in ECHO’s location in Florida, mangoes are available in abundance this time of year. The trees at ECHO produce so quickly that there are often ripe mangoes that you can take straight off the ground! While making mango jam for the first time last weekend, we came up with some ideas for what to do with this overwhelming blessing.

Although I have never been a big fan of jam or jelly, this recipe did not disappoint. No matter what your previous experience with jam has been, I highly recommend looking into this delicious recipe.
If you want to take it simple, toast is the way to go. The jam’s sweetness and toast’s satisfying crunch make a perfect combination.
Maddie and I have enjoyed mango jam on our toast nearly every day, unable to resist the four jars we brought home.

When squeezing the last bits of mango off of the pit, collect the extra mushy fruit and juice in a bowl and pour it into an ice tray. Leave it in the freezer until the cubes have completely solidified and then drop them into your drink.
